Really great review. I had seen this knife recently when I was looking for a new chef knife, but was skeptical. Good to see that it actually holds up. I bought a Mac Chef Series 8.5″ guyoto in the end. I like the Mac enough to keep it, but I will probably buy more knives. I think you understand. Keep making great vids!

They use 3Cr13, which is a fairly soft steel with a carbon content of less than 0.35%, that’s why it’s so easy for you to put an edge on it. But edge retention is likely going to be pretty poor unless they heat treat it properly. Even then, it still wouldn’t be great. This is low-end steel and is probably not worth the price when there are knives on amazon made with better steel for the same or a lower price.

I like the longer video because you can actually see the entire process from beginning to the end you cannot receive a better comparison stenograph video to video so I would vote for the longer video that more complete video thank you.

Really great video. I became a cook after a TBI that in a way dumbed me down to the simple needs. The only thing I can do was cook. Even though it produced anxiety cooking large quantities of food I pushed through. I discovered I am a very good soup cooker and people loved my soups.
