I prefer K-Sabatier to Thiers-Issard…they usually have better grinds.
I have the same but it easily blunt and I am thinking to buy the new one Victorinox Fibrox Chef’s Knife (40520)
Great video and a beautiful knife! I picked up a set of the vintage carbon steel massif line from better things years ago and absolutely love them. I don’t take them to the kitchen with me because maintaining them is a chore, but in the home there’s nothing finer. I do still use K sabatier at work. Highly recommend both lines!
